For this month, we had the pleasure of inviting Jesús Iñiquez to reveal his current favorite selection from Archetype Coffee's diverse lineup. His chosen brewing method involves the innovative Sibarist B3 filter, perfectly paired with the Medium ORIGAMI Resin dripper (Air M)

Directions
- 1. Rinse filter with 100ml water
- 2. Pour coffee grounds, settle with wdt tool or a needle to maintain brew bed fluffy
- 3. Bloom: 75 ml
- 4. At :30 add 75 ml
- 5. At 1:00 add 75 ml
- 6. At 1:30 add 75 ml
- 7. At 2:00 add 50 ml
- 8. Total brew time ~3:00-3:10

The aim of this recipe is to keep itsimple and structured, providing a balanced cup that is easily repeatable.

This coffee in my opinion, is the quintessential Ethiopian Natural that reminds me of the first time I had a coffee like this. The excitement of the possibilities of what coffee could taste like opening the doors for me to dive deep into experimenting, learning, and being excited about brewing.
Sibarist B3 Hybrid is the latest in the Sibarist lineup. The new B3 Technology has been developed together with Matt Winton (2021 World Brewers Cup Champion) during a whole year prototyping and testing. B3 Hybrid is compatible with V60, ORIGAMI, flower dripper type of conical brewers. It has a small flat bottom at its tip, bringing the best of both conical and flat bottom together in one filter option.
The hybrid shape encourages flow through the dripper by providing a faster and higher extraction, reducing the clogging that might appear on high filtration materials and avoiding the concentration of fines in one point. Also its B3 paper’s porosity allows clarity of flavor, and the rigidity of its structure minimize the contact points with the dripper creating even balanced cups.
