Experience the fullest potential with SIBARIST FLAT Filter
Reinvent your recipes, reach new cups, and rediscover your coffees!
//Fits with OREA 3 / Kalita 185 and other flat bottom style brewers//
The FLAT is the unique and original non-fluted flat-bottomed filter for coffee drippers, designed and registered by SIBARIST. It offers a unique, smooth and unobstructed area that offers the perfect and even space for brewing with full access to the coffee bed. It eliminates the bypass effect and provides the most even extraction with the maximum coffee particle yield, preventing coffee particles from being trapped in fluted areas.
The FLAT uses the FAST Specialty Coffee Filter technology, its no-waves surface eliminates the bypass to provide a regular water contact to all coffee particles and continuous turbulence. Also have all the FAST Specialty Coffee Filter characteristics.
The air flow between the filter and the brewer is eliminated by the flat paper’s adhesion to the dripper walls when wet, thereby removing the “bypass” that can cause astringency in the cup.
The FLAT is very sensitive to dripper geometries and properties since once it is wet, the filter stitches to the dripper walls, eliminating the bypass effect and the air circulation through the filter. This makes it possible to obtain different flow rates depending on the dripper used, opening a new world of possibilities for the barista to experiment with and select the dripper depending on the target extraction time.
The filter CONE FAST eliminates the air gaps created between the waves of classic flat bed filter which ones produce the bypass effect, the FLAT FAST eliminates any air circulation between the filter and the dripper. The FAST Specialty Coffee paper provide enough permeability to provide a fast and excellent flow rate without these extra air channels. In addition, provides a characteristically clean taste and silky mouthfeel that is free of paper flavor.
The free waves shapes do not allow to the coffee particles to be trapped on the waves, providing a more uniform and complete extraction, ensuring that all the coffee particles used on the brew will be in contact with the water in a more uniform and complete fashion providing a more even extraction. The smooth surface offers a better geometry to create a more uniform turbulence.
A smooth, obstacle-free infusion volume provides freedom, more even turbulence and uniform circulation of particles in the slurry when pouring, resulting in even extractions.
The pouring speed and turbulence have a direct effect on the filter’s flow and drawdown: cause-effect, making it possible to lengthen or shorten the extraction with the pouring valence.
Because the filter adheres to the dripper walls, it provides 100% access and view of the coffee-bed area, gaining you more pouring surface and full access to the coffee slurry.
The FLAT is very sensitive to dripper geometries and properties, making it possible to obtain different flow rates depending on the dripper used, opening up a new world of possibilities for the barista to experiment with and select the dripper combo depending on the target extraction time. Pair with a flow-rate-compatable scale to explore a new world of possibilities!
Created to offer the greatest consistency and coffee particle extraction uniformity, the filter always provides the same geometry, with no coffee trapped or isolated in any fluted areas, providing continuous even agitation.
The FAST Specialty Coffee Filter flow has the potential to yield higher extractions and performance values. It also has a lower LRR..
It leaves no trace of flavor or aroma in the cup. The material uses thinner fibers and less substance.
As a safety precaution, all filters and minerals are final sale and not returnable.
The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.
The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.
The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.
“This is a product with a history similar to that of a coffee bean. Its whole process is reflected in the cup, in the form of possibilities, irregularities, aromas and flavors. We must measure up.”
FAST Specialty Coffee Filter technology is a unique fiber composition that provides a “drawdown” circulation of liquid (dissolution of soluble coffee particles) through its unprecedented structure, offering a fast, constant flow in extractions while retaining the solid, non-soluble particles. This results in a clean, silky cup, free from external flavors.
FAST filters open up a new world of preparation possibilities, giving the barista the chance to experiment and obtain formerly limited features such as: faster flows, elimination of the need for air channels, increased extraction and heat delivery performance… these are some of the features offered by the FAST line.

THE BIG BOY
Regular price $35.00 Save $-35.00The Big Boy is a brand new brewer from OREA that brings a lot of what people love in the OREA's smaller brewers to much bigger volumes of coffee.
The Big Boy is made for big brews, with an optimal dose range of 40g-60g of coffee for 600ml to 1 litre. You can go as low as 32g or as high as 80g with the right recipe, but OREA recommends to keep pours big (200ml+ per pour) for optimal performance. So if you brew lower quantities, grind finer and use bigger pours. The brewers come with guides in the box for recipes for two, three, or more people.
The Big Boy has a unique bottom design that uses a series of tall teeth/ridges to hold the paper up perfectly straight and always allow for airflow under the bed. The brewer itself will not clog (stop dripping due to suction/etc) - but if you grind too fine or if your grinder is not very good in general, the paper filter itself may clog. Some coffees will naturally drain slower than others as they provide different resistance to water, based on processing method, roast style, etc. However - the device itself will not get in the way, providing a huge 8cm opening at the bottom through the use of the ridges. In addition, there is a big exit hole in the middle that will always keep the coffee flowing.
This is definitely their most brutal design. It's big, toothy, aggressive - a bit of a departure from their normal design language. But we love it - because the form really follows the function here. This brutal toothy design is also super-optimised and contributes to the great performance under big volumes. It also leads to its consistency. What you will notice is that while the brewer is big and brutal, it drips gentle drops - it is really beautiful to see. We hope you will love it!
With the right recipes and for most coffees, you can brew 600ml to 1 litre in about 3-4 minutes. You can push this if you use the Negotiator system along with a fast paper like the Sibarist FAST. You can also push it by manipulating grind size and pouring volume - it really depends what you are looking for. This brewer is - like all of the other OREA brewers - very flexible. But like all of them, you can also keep it simple, use the OREA wave filters and the simple recipes OREA has included in the box.
In specialty coffee, some people are a bit too snobby. There's too much nonsense around the idea that brewing bigger size brews can't taste great. Part of this is because the devices they have now aren't so good at it - creating a myth that only brewing 12g can yield tasty coffee in the cup. OREA approached this project with a totally open mind - designing a big brewer for big brews rather than trying to adapt an existing one for more volume.
Brew bigger batches with increased clarity and sweetness. Batch is known for tasting batchy - it's kind of its own thing. What OREA wanted was to scale up the taste profile of the V3 and they think they managed to get as close as one can get. OREA wants the option to brew for more people, quicker - but they don't want the stewed batchy taste. Because OREA recreates a lot of the dynamics from the smaller brewers in the bigger, wide bed, you can expect similar results in the cup. Obviously when you brew bigger quantities you can't be as precise in your pouring, agitation, etc - so it's never going to be perfectly equivalent. This is the closest you'll get to that perfect one cup brew but in higher volumes.
For those that enjoy more paper options, the Big Boy is compatible with all of OREA's Large/185 flat papers when using the Big Boy Negotiator tool. This is a simple way to insert a FAST Sibarist paper, the new Type C - Clarity paper, or the classic Type G flat paper. Experiment with faster brew times, finer grinds and different cup profiles while creating more space in the brewer with a super-precise tight fit of the paper to the brewer walls. Due to the design of the brewer, you will always have fast flowing brews even when using this method.
If you brew for yourself and your partner, or flatmates, family or colleagues - this is a great option for you. If you run a cafe and want to offer better-quality batch brew or to brew multiple filter brews at once with great results - this is a great option for you. If you're brewing at events - this is a great option for you. If you just like to brew one time per day and take the coffee with you in a flask - this is a great option for you. This brewer is for anyone that wants to make a tasty bigger batch, with low effort and consistency.

THE AIR S
The key features of this AS resin product are its lightweight design and durability. It weighs approximately 50% lessthan its porcelain counterpart, while offering superior impact resistance and rigidity, making it tough enough to withstand rough handling.
The iconic ribbed design, a trademark of ORIGAMI, remains intact in this version. Leveraging the properties of AS resin, which retains heat better than porcelain, this dripper ensures a more stable and consistent brewing experience at an even higher level.
Experience brewing perfection with the Air S Brewer, designed to be compatible with both wave and conical style filters. The new Cone + Wave Filters will also be available for purchase at SLOW POUR SUPPLY mid-late November.
Made with styrene-acrylonitrile copolymer, the Air S is not only resistant to boiling water but also dishwasher-friendly.
